Rainbows End Cabernet Sauvignon 750ml

This wine pleases old style and new world fruit style Cabernet supporters. It balances the blackcurrant/cassis fruit and the earthy, barnyard old style character very elegantly.

Banghoek is a great area for Cabernet Sauvignon. We only pick Cabernet Sauvignon in the last week of March/first week of April. Slow ripening and picking at optimal ripeness allows a lower alcohol vol. Something in between Old and New World style. Accessible at a young age but can also age for up to 6 years. 

Composition:
100% Cabernet Sauvignon
(French clones 23 and 169, German clone 163 and South African clones 37 and 46).

Tasting Notes:
The wine offers aromas of ripe plums and blue berries with nuances of fynbos and a touch of dark chocolate. The pallet offers bold ripe dark fruit with a slight herbaceous finish and lingering fine powdery tannins.

Maturation:
12 Months in 58% new wood, 17% second fill and 25% third fill French barrels. Two rackings during wood maturation. Thereafter bottled without filtering or fining. Natural deposits may therefore be found in the bottle. Can be enjoyed now but is anticipated to reach its optimum in 2-4 years time.
